With ingredients sourced directly from Tasmania's land and sea — think freshly shucked oysters from Boomer Bay, Scottsdale pork ribs glazed in cherry and mustard, buttery East Coast cray rolls, and Cape Grim beef with native pepper berry jus, the winter solstice event is a celebration of head chef Jesse Haywood's experience and connection to the island.

To start, the all-inclusive evening will begin with a private guided tour and welcome drink, before settling in to enjoy a collection of bold flavours and refined craft, with a delectable 8-course culinary experience, including dessert and signature cocktail.

With each dish thoughtfully paired with a hand-selected Tasmanian wine and in-house brew (non-alc and new-alc options available), it's the perfect way to savour the solstice and celebrate the season.
