The Earp family have been established in Newcastle NSW since 1883, and in 2019 the current generation opened the doors of our ultra-modern distillery. Located in the beautiful port-side suburb of Carrington, Earp Distilling Co. offers quality, creativity and new experiences to connoisseurs, the spirit curious and everyone in between.

At the distillery, you’ll find a stylish alternative to traditional pubs and bars without losing that intimate local feel. They offer seasonal menus full of the best local produce, a rotating cocktail list featuring their spirits, and a bounty of local beers and wines. The distillery regularly holds ticketed and free events for the public to attend and enjoy.

All of their spirits are produced using local and organic ingredients, where possible, in their technology driven modern stills. These iStills produce spirits with up to 70% more energy efficiency than traditional methods - one part of their journey to create a distillery and spirits synonymous with adventure, sustainability and quality.

A spirited evening for two: part chemistry, part cuisine. Create something truly personal with our signature Blending Class, where you and your guest will explore botanicals, taste test, and handcraft a bespoke spirit using your choice of gin, vodka, or rum. Together, you'll agree on your final blend, which will be bottled as a shared 500ml take-home keepsake, the perfect memento of your evening. Snack on Botanical Marinated Olives as you craft your boutique spirit, as blending wraps up, ease into the dining portion of your evening with a Roasted Red Capsicum Dip, you'll then sit down to enjoy your choice of two entrées and one main to share, served with a side of our charred cos salad. Finally, finish the experience with one dessert between two, the perfect sweet note to end your evening.

Our Spirit School is the ultimate distilling experience, offering you the chance to step into the role of head distiller for a day in an engaging, hands-on session. Tailored for those passionate about spirits, this immersive three-hour class is designed for pairs. You'll receive a comprehensive introduction to the history and art of distilling, along with access to an extensive selection of botanicals sourced from both Australia and around the world. Under expert guidance, you'll learn to use our state-of-the-art miniature stills to craft your own spirit and blend different 'cuts' to create a perfectly balanced, finished product. At the end of the session, you'll take home a custom, hand-filled and labelled ceramic bottle of your unique creation. Please note, a Twin Ticket allows two participants to share a still, with each taking home a 500ml bottle of their custom spirit. A Triple Ticket allows three participants to share a still, with each taking home a 500ml bottle at 42% ABV. To ensure the session runs, we require a minimum purchase of three tickets.
